Begin at the Göreme Open Air Museum, the densest concentration of rock-cut Byzantine architecture in Cappadocia. Over 30 cave churches and monasteries are carved into the soft tuff cliffs, decorated with frescoes from the Iconoclast period (726–843 AD) and the post-Iconoclast revival. Highlights include the Dark Church (Karanlık Kilise) with its vivid painted ceiling, the Snake Church with unusual medieval iconography, and the Apple Church with its iconic cross-plan interior.
Drive to Uchisar, dominated by the tallest rock in Cappadocia — a massive volcanic cone riddled with Byzantine-era tunnels, rooms, storage chambers, and stairways. The summit was used as a military stronghold from the Byzantine period through Ottoman times. Climb to the top (with carved steps throughout) for the finest 360-degree panorama in Cappadocia: the fairy chimney valleys of Göreme, the valley toward Avanos, the flat-topped rock of Ortahisar, and on clear days, Mount Erciyes (3,916m) to the south.
Walk along the Pigeon Valley rim trail for views over hundreds of carved dovecotes (güvercinlik) cut into the cliff faces. Byzantine and medieval farmers carved these niches to attract pigeons, collecting their dung as fertiliser for vineyards and orchards.
