The village of Grisel grew up at the foot of its castle, whose existence is already documented in 1106. The castle formed part of the defensive frontier line between Castile and Aragon, and was the site of intense conflict for centuries. Among its known owners was Don Lope Ferrench de Luna in 1301; in 1352 it was bought by the Cathedral Chapter of Tarazona from Hugo de Cardona, reinforcing its fortified character against the Castilian threat. In the 16th century, the Chapter adapted it to a more palatial use.
The castle was sold in 1988 to Manuel Giménez Aperte, who began an intensive restoration completed in 2014, recovering much of its original appearance. Today it operates as a small rural hotel with capacity for 29 guests, with six themed double rooms, each inspired by a different literary genre.
The castle's documented history since 1106 places it among the older fortified sites in this stretch of the Castile-Aragon frontier, with ownership passing from feudal nobility to an ecclesiastical institution — the Cathedral Chapter of Tarazona — in 1352.
